  • 2 large chicken pieces (preferably cutlets)
  • 1 large potato
  • 1 sweet potato
  • 1 eggplant
  • 5 yardlong beans 
  • 2 red onions
  • 1 teaspoon salt
  • 2 tablespoons palm sugar 
  • 5 tablespoons vegetable oil
  • 3 tablespoons fish sauce
  • 1 teaspoon prahok (fish or shrimp paste)
  • 2 tablespoons red/yellow curry paste (Kroeung paste)
  • 1 cup coconut cream
  • 3 cups of boiling water

Ingredients For Kroeung Paste

  • 3 shallots
  • 2 stems lemongrass 
  • 1 (2 inch) piece galangal
  • 3 teaspoons fresh turmeric
  • Zests of 2 kaffir limes
  • 4 kaffir lime leaves
  • 6 cloves garlic
  • 3 dried red hot peppers
  • 1 fresh red hot pepper (or more, depending on your preference)
  • ¼ teaspoon salt

Making Process Of Kroeung paste

Step 1. Clean all ingredients. Chop the lemongrass, shallots, and lime leaves. Dice the galangal and slice zests of 2 kaffir limes into thin strips.

Step 2. Put the kaffir lime leaves and zests into a mortar and crush them until they're smooth.

Step 3. Add lemongrass, galanga, peppers, and turmeric and pound them together.

Step 4. Continue pounding until your mixture is dark red, then place shallots and garlic inside.

Step 5. Keep mixing and stop when you have a smooth blend.

How To Make Kari Sach Moan

Step 1. Turn on your stove at medium heat. Add oil and the Kroeung paste inside a big pot and constantly stir for one minute.

Step 2. Add the chicken and half of the coconut milk. Keep stirring it for two minutes on medium heat.

Step 3. Gradually put potatoes, eggplants, yardlong beans, and onion inside and mix them.

Step 4. Pour the water. Add the rest coconut milk, salt, palm sugar, fish sauce, and shrimp paste.

Step 5. Mix the blend well. Cover the pot and leave it for 15 minutes.

Step 6. Reduce the fire to low-medium level, and cook it for 15 minutes more.

Step 7. Take out and enjoy with bread, hot rice, or noodles.
