There is a beautiful history of Pad Thai when it came out of a cooking competition held by Plaek Phibunsongkhram (also known as King Phibun) in the late 1930s. After acceding to the throne, he made quite a few changes to Thailand. The King adjusted many regulations to westernize Thailand, including changing the national name, which used to be Siam. He held this culinary competition to identify the culture and find a new national dish. This dish won. 

The aim was to modernize the cooking style so that Thailand cuisine wouldn’t be influenced by Chinese culture anymore. Therefore, Pad Thai is a combination of many different components that originated from various regions of Thailand. 

When eating, you can feel the mixture in flavours, including spicy, sour, sweet, salty, and bitter. All of them make the dish so unique. The ingredients are fresh and natural. Besides, the sweet taste from palm sugar, spiciness from Thai chilli, and sourness from tamarind is mixed well.

To make this dish, you need to fry almost every ingredient. Firstly, you need to fry shrimp and then add soaked dried rice noodles into the pan. Secondly, you add firm tofu and tamarind paste to mix them all. After stir-frying for a few minutes, you start adding spices and other ingredients, including fish sauce, red chili peppers, palm sugar, dried shrimp, eggs, green bean sprouts, and shallots, to enhance the flavour. Once all the ingredients are mixed well together, the dish is topped with some roasted peanuts and ready to be served with a lime wedge. 

Today, the dish can be cooked in a slightly different way depending on what the customers want with the ingredients. For example, it can replace shrimp with chicken, pork, and even no meat. A perfect dish of Pad Thai usually comes with a little water, fresh shrimps, and a piece of tofu as toppings. The ingredients for vegetarians don’t include fish sauce, but soy sauce and no meat.
